I am also curious about the course saying that the chef’s knife is the most useful knife? I have one, but prefer my 4” paring for all but large items like cantaloupe.

Answer:

If you like your pairing knife better than a chef knife, go for it. Um, you know, when I started working with Jacques Poppen during our course, the Jacques Poppen, um, uh, what was it? The, the taste or the, the Jacques Poppen course that we have on Rouxbe, I was quite surprised to see that he used a pairing knife for most of the stuff he was doing, and that's great, that's fun. Um, you know, it's a different generation learn different, different ways. So chef knife is not always used. If you're more comfortable with a four inch pairing knife, um, instead of a large knife, that's totally fine. Um, just re it's gonna be easier on your hand with a bigger knife than it would for a smaller one. But if you're used to that, stick with it.
