Question:
Most recipes I bake, I have to make 20-40 servings of. What suggestions do you have for increasing quantities?
— Heather Hutchison
Answer:
So what you're gonna do is you're going to figure out the conversion factor. I use gram weight in all my recipes. When you look at my recipes in the course, you look at the recipes of my cookbooks, you see that it will say one cup of this. Sometimes it says grams and sometimes milliliters. But I ask all my students to please keep a notebook and use a scale. I have several scales and weigh your ingredients and see I've been weighing a lot. So this is my little 50 gram weight so that I can see if my scales are actually in calibration. So what you're gonna do is you put the number that you want on top over what you have. Like let's say 60 over 48 di devi, 60 divided by 48 equals 1 25 year conversion factor is 1 25.
